My poor husband. He loves my cooking but he can't help but get nervous everytime I say I've been on the food network website. Since that tells him usually for dinner I'm trying somthing new.
However in most of those cases he usually doesn't realize that I'm just looking for somthing to spice up the normal meal I make. Which I did exactly that last night to a meal I made that he absolutely loved.
I took a recipe I do and spiced it up with a recipe off the food network. Then found a quick and easy recipe for new potatoes so I could use up my potatoes before they went bad. In the end we had bbq'd beer can chicken, new potatoes, and corn on the cob (also had to use them before they went bad).
I am going to share my altered version of the beer can chicken since I had to do a bit of cutting on the measurments, because the recipe called for a whole 4lbs chicken. I was working with a 3 pack of chicken breasts.
Beer Can Chicken
1 can of beer ( I used half a bottle of beer, since we don't buy cans)
1 1/2 TBS of favorite bbq rub (I used Famous Dave's rib rub)
1/2 TBS of paprika
favorite bbq sauce (it calls for 1/4 cup but i didn't measure it )
1/4 TBS of black pepper ( didn't use this because I generally lightly pepper most foods I make)
The recipe from the food network also puts it on the grill I baked it in the oven. So here is how I did it.
I preheated the oven to 350F since I needed that temp for the potatoes. Then poured about half the beer in to the bottom of my cooking dish. Placing the chicken breasts in the beer I made sure to rub both sides in the beer first.
Then I sprinked 1/2 TBS of the rib rub on each breast. Followed by lightly sprinking the paprika on top of that, I actually had left over paprika which I sprinked in to the beer.
This is where I followed the directions and put the chicken in the oven like that. Again didn't use the black pepper. I let it cook till it was about half way done then I pulled out the chicken to put the BBQ sauce on top of each chicken breast. Making sure each one had a nice coat on top. (hence why I didin't measure it.) Then shoved it back in the oven to finish cooking.
And below is the new potatoes recipe I used. I didn't have 16 lg potatoes, more like 8 baby red potatoes, but keeping the same measurements I didn't need the cooking spray and they turned out great.
New Potatoes
cooking spray
2 TBS of olive oil
2 TBS finely minced garlic
2 TBS fresh minced rosemary
salt and pepper (for taste)
16 large new potatoes, scrubbed and cut into relatively uniform chunks
preheat the oven to 350 degrees F
Spray a glass baking dish with cooking spray. Place the olive oil, garlic, rosemary and salt and pepper in a large re-sealable plastic bag. Add the potatoes, seal and toss to coat evenly. Pour in to the prepared baking dish. Roast the potatoes for about 30 to 40 mins. until crisp on the outside and tender on the inside.
I waited to put the salt n pepper on the potatoes after they came out. Which was more to make sure I didn't use too much or not enough, since its just for taste anyways.
When making this meal next time I plan to prep the potatoes first, since they took a little longer to cook than the chicken did.
