| my food evolution |
So I promised I would include my own journey to rediscovering food in this blog.
Here goes. Sorry this is long but it took a while for my eating habits to evolve!
About a year ago I started dating this guy that was a vegetarian. Eating veg wasn’t a new concept to me, I always knew some people that chose to ate veg (like my cousin) but I never thought twice about doing it myself. However, since we were dating, if I was making a meal for us, it would always be veg. If we went out to eat, I always ordered something veg too. I realized that I didn’t miss meat terribly, and I liked eating healthier. (some ppl that go veg turn to junk food instead of meat, but I increased my fruit, veggie, and pasta intake). I called myself a part-time vegetarian.
Excited about my increase in veggie eating habits, I started looking online to the health benefits of veggies, when to buy, how to store, cook, and what to eat. All this veggie searching led to other sites that were pro-vegetarian. I curiously read them and realized that there were lots more reasons besides moral ones to be a vegetarian. I read that many processed meat products have SODIUM NITRATE in them….the same chemical injected into rats to give them CANCER so the doctors can then study the cancer!! After reading this (after months of being a part-time vegetarian) I said that’s it. No more meat for me, I wanted to avoid this cancer causing nitrate for good.
I don’t remember the specific day I “converted” but it had to be sometime between August and Thanksgiving 2008 because I remember I didn’t eat the turkey.
All during this time, I continued my “research” online about eating vegetarian, nutritious food and the digestive process.
In January of this year (2009) I made the decision to go vegan. Well actually I don’t really feel 100% comfy calling myself a vegan, because I only avoid cow’s dairy, not goat’s, and I still eat honey. When people ask or comment, sometimes I say vegan, sometimes I say vegetarian. To read the reason I made the switch to vegan read my thoughts on gluten/dairy free!
But the point is: currently, I’m a vegetarian who doesn’t drink cow’s milk or byproducts of cow’s milk (cheese, yogurt, cream, butter, ice cream, whip cream). I also AVOID ASPARTAME at all costs, and MSG as well.
You might ask, so what do you eat? I eat A TON of raw fruits and veggies, as well as some brown rice, with black beans and guacamole, smoothies, nuts, and seeds.
You might ask, well do you like it, restricting your eating so much? The answer is…I LOVE it! I love it. I feel so healthy, and I know I am giving my body the environment it needs to maintain itself and be strong.
