I've been digging around my files and came across this great Imitation Eggnog recipe. Some people don't like the raw eggs in eggnog, so here's one for you, tastes just as good as regular eggnog, just without the eggs.
Version #1
Imitation Eggnog (also known as Egg-less Nog)
1 pkg instant vanilla pudding
1 1/2 quarts milk
2 1/2 tsp rum extract
1/2 tsp nutmeg
PREPARATION:
Blend pudding mix and 2 cups of milk, following directions on pudding package. Chill for 5 minutes. Add the rum and nutmeg, then mix in the rest of the milk. Chill and serve.
(you can adjust the nutmeg to your own preference)
Version #2
Mock Nog
6 cup Milk
1 pkg Instant vanilla pudding and pie filling; (4-serving size)
4 teaspoon Rum extract
¾ teaspoon Ground nutmeg; divided
2 cup Heavy cream; (1 pint)
2 tablespoon Confectioners' sugar
In a punch bowl, combine the milk and pudding mix; mix well. Add the rum extract and 1/2 teaspoon nutmeg; mix well and set aside. In a medium bowl, beat the heavy cream and confectioners' sugar until stiff peaks form. Add half of the whipped cream mixture to the milk mixture; stir until well blended. Dollop the remaining whipped cream mixture over the top and sprinkle with the remaining 1/4 teaspoon nutmeg. Serve immediately. NOTE: If you'd like to make this a bit ahead of time, go ahead -- but you may need to add some milk to thin it down just before serving.
Version #3 (low-cal)
Here's a version with lower calories
1 pkg (4 serving size) sugar-free instant vanilla pudding mix
4 packets Equal®
7 cups skim milk
1/2 teaspoon nutmeg
1 12 ounce can evaporated skim milk
2 teaspoons imitation rum flavor extract
Preparation:
In half gallon pitcher or large deep bowl, combine pudding mix, Equal® and 2 cups milk.
With wire wisk or electric mixer, mix completely for approximately 1 minute.
Add 3 more cups of milk and continue to mix.
Add nutmeg, evaporated milk, rum flavor extract and remaining milk. Mix again and chill several hours.

I just love this stuff. It's a mix for a hot spice tea, very easy recipe; just mix the ingredients together, store in a jar or other airtight container, and when you want a nice cup of hot tea, add a big spoonful to boiling water and enjoy!
Hot Spiced Tea
Holiday Gifts for Christmas. Make a big batch of this and gift your friends and family with it.
1 large jar Tang
2 cups sugar
1 package lemonade mix
1 cup instant tea
1 teaspoon ground cinnamon
1 teaspoon cloves
1/4 teaspoon ginger
1 small bag red hots
Mix all ingredients thoroughly. Store in airtight container. Add 1 rounded spoonful to boiling water and stir. This recipe can easily be doubled, tripled, quadrupled, etc., and looks beautiful in gift jars for Christmas presents.
