I'm 5 months into my chef apprenticeship. I've learnt a lot in the last 5 months, and it blows my mind how much more I'll be learning over the next few years.
In Australia, a chef apprenticeship goes for 36 months. Sometimes it can take up to 48 months, but only if you're a slow learner... Or useless. In Queensland, for the last few years, there's been what's called a 'skills shortage', and good chefs have been hard to come by. I've spent most of my working life in hospitality, mostly front-of-house, but I decided to develop my passion for food into a career mid year 2007.
You might wonder why I chose an apprenticeship. There are a lot of students going to University or TAFE for diplomas and degrees. I hate classrooms. I hate assignments and tests. As soon as a piece of paper is placed under my nose, or I hear the scratch of chalk on a blackboard, my brain turns to week-old bubblegum. I can't help it, the words jumble together, and I can't concentrate. Subconsciously I'll start doing any other productive activity to avoid said assignments and tests. I won't even realise I'm avoiding them until it's too late. In highschool they called me a deadline junkie. While I laugh at the title, it's not true, I just couldn't thrive in a classroom.
Learning by doing has been said to be the most effective way of learning anything. For me, that's definitely true. My workplace is my classroom, and every time I leave the kitchen, I leave with the opportunity of feeling like I've achieved something real.
