 Chicken Stuffed Tomatoes

Idea: The idea is to make a Paella type of dish with chicken and stuff it in a tomato. Neutral dish (no dominating flavors), great way to start a meal.

What I did:
1) Took the inside out and put them in the oven.
2) In a pan, I stir fried the chicken (Leg, small pieces) with onion and garlic, when almost cooked. Added the precooked rice and the inside of tomatoes (left over :( ), no broth was necessary as there was some liquid from the chicken and the inside of tomatoes. Added a bit of chopped fresh herbs (coriander, mint, basil…)
3) Stuffed the tomatoes.

Problems/Improvements:
1) I put a lot of salt but still wasn’t enough, should probably even rub salt inside the tomato after it cooks.
2) Coriander was the main star in the herbs (worked well with the chicken), needs a lot of it next time.
3) The precooked rice wasn’t a good idea. (I didn’t plan it, was short on time and had leftovers). Will try to go with the Paella style cooking next time, it will help it the stuffing “creamy” stick together.
4) Adding Chinese mushrooms (Shiitake mushroom) would be an amazing idea.
